Miyabi Koh Paring Knife, 3.5"

An FC61 stainless steel paring knife is made for precise, close-in work where control matters most. Use it for peeling fruits and vegetables, trimming and shaping, removing blemishes and making neat garnish cuts. The forged paring knife is hand-honed to a 9.5 to 12-degree edge. That acute angle is designed for clean, precise cuts and a refined feel when you are working in hand or on the board.

Full-tang construction means the blade steel extends through the handle. On a paring knife, that build helps support steady balance and confident control during delicate trimming and peeling.

Miyabi uses the Friodur2 hardening process to improve the microstructure of the FC61 stainless steel. According to the maker, this helps support cutting performance, corrosion resistance and durability over time.

The faceted pakkawood handle is shaped to work well in either a Western or Eastern hold. Miyabi also weight-tests each handle in a nine-step process to help deliver a comfortable, consistent feel from knife to knife.
